Eggplant Parm Casserole.
One of the best things I have ever made or eaten that involves Eggplant.
For real, this was to die for...
Fish Taco. Er, Fish Burrito.
White fish, avocado, homemade salsa (I'll talk about that at a later date),
rice, black beans, cilantro, sour cream... Yummyness at its best!
These were lasagnas. I made them up at Sunday River for a group of about 20.
Not gonna lie, ALL the Ingredients (noodles, sauce, cheeses...) were WalMart brand (sorry, it was all we had up there) and it was the most amazing (shockingly amazing) lasagna I ever had (and if you know me, you know lasagna is my favorite food next to lobster)
Oh... and let's not forget my (now) famous Crock Pot Mac & Cheese. Words can not express its deliciousness...
And then there was the Sangria....
If you know me- at all- you should also know that I make Sangria. Correction- I make one hell of an amazing sangria. I typically only make it in large batches, and I usually only make it for "Girl's night". One night in particular I made it and someone said something to the effect of (forgive me if I get this wrong, but remember- there was a lot of very potent sangria involved) "this stuff makes me want to slap a bitch". Then someone commented how the sangria turns us into "crazy bitches", but we are sexy too, so we should be "crazy sexy bitches", and there came the name. Again, we were under the influence, so that story may not be accurate, but it's how I remember it, so that is that.
