Guaca-more please!

Last weekend I went down to the Cape with a few girlfriends, just to get away and relax for a few days. And it was wonderful!
Anyways, on Saturday we got some groceries, and I decided I would make some lunch and snacks. I mean, we were staying in a huge house with a huge kitchen, so of course I had to do some cooking!!!
I decided to just make a big chicken Caesar salad, and some fresh salsa and guacamole. I wasn't going to post these, since they are really simple, but the girls told me I should, so here goes.
   
  
Oh, and thank you to the Amazing sunlight for providing the perfect lighting for my pictures!! These are waaaay better than the ones I take in my kitchen that has no natural light...

OK- Caesar salad. I can't lie, I use a brand called et tu Caesar that is totally amazing! Trust me, this is by far the best packaged Caesar salad mix you will ever have. It's great with steak tips, salmon, or shrimp too. But I kept it simple this time and just made chicken.
So- chop some lettuce, mix in all the contents of the salad kit (dressing, Parmesan, bacon bits and croutons) then add the meat. Yes, its that simple!

   

Next up: Salsa.
Plum and vine tomatoes, red onion, cilantro, lime juice, salt, pepper and garlic.
Chop, mix, flavor to taste, and you're done. Yes, this is that simple too!

   
  
     
  
   
  
And, last but not least.... guacamole.
This is Suuuuper easy, especially if you already made the salsa, because all I do is mash up some ripe avocados (make sure they are really ripe so they are easy to mash), and add a few spoonfuls of the salsa.
(sorry, I forgot to snap a photo of the mashing, but I think you can figure it out!) :)


And there you have it!
Chicken Caesar salad, and salsa & guacamole (with chips of course!).
