quick corn salad

In my next post I make lobster rolls. Which, honestly, I could eat without anything else. I am happy just having lobster rolls by themselves.
But for some reason I just felt like I wanted to have a little salad of some sort with them this time, so I put this together. It's super easy and comes together real quick, so you have no reason not to try it.

Ingredients: corn, black beans, tomato, red onion, cilantro, avocado, a little fresh-squeezed lime juice and a little chipotle pepper adobo sauce.
And yes, I cheated and bought pre-packaged avocado halves.
And no, I will probably never buy them again. I mean, they were ok, but nothing beats fresh avocado.


So, all you need to do here is open a couple cans, chop a couple things up, and toss them together.
Easy enough, right!









YUMMM!!!

Now get excited for the lobster rolls...
