lobster rolls

Lobster, by far, is my most favorite food.
Hands down, no doubt about it.

And when they were on super sale at the market the other day ($3.99/lb), I just had to get some!
So I got 4. Yep, four. Aren't they cute? (hahaha)


And, when I got them home I had no idea what I was going to do with them, but I knew they needed to be cooked, so I started in on the task....

Now, some people like to boil them, but I prefer to steam them. To me steaming is better because the lobster doesn't get full of water, and it keep all it's salt water flavor.
So I got my big steamer pot from the closet, put a few inches of water in the bottom, tossed in the little creatures, turned the burner on high, covered them, and left them to cook.



About 20 minutes later I turned the burner off, uncovered the pot and let them cool.


Look how much cuter they are cooked! (I know, I am evil. Oh well).


Once they were cooled down, it was time to get the meat out. And if you have ever done this, you know it is not a quick or clean process. It takes a little time, patience and skill, and will leave you feeling like you need a bath. But it's still totally worth it.
My tools: some dish towels, some wet paper towels, a couple bowls (one for shells, one for meat), a lobster cracker and a lobster pick.


Now, as I already said this is a messy process, so for obvious reasons I didn't take any pictures while I was removing the meat, so if you need some tips, feel free to Google it (or you can check out this page from a really cool website I like to follow).
But here is what it all looked like when I was done...



When all the meat was removed, I popped it into a container and put it in the fridge until I decided what I wanted to do with it.
Then I washed the dishes, scrubbed the kitchen and the table down, brought the shells out to the garbage, put my clothes in the laundry and took a shower. Because I wasn't kidding when I told you I make a mess. Also because as much as I love lobster, I don't like the smell to linger in my house, so I like to clean it all up right away. 


Ok, so a couple days went by and after giving it a lot of thought, I finally decided that I just wanted to make lobster rolls. Because although there are so many amazing things that you can make with lobster meat, sometimes a nice, big lobster roll is the best choice to make.
Let's begin.
Lobster, celery, mayo, rolls and butter.


Roughly chop the meat, and finely chop a little celery.


Toss them back into the bowl


Then add a little- and I cannot stress a LITTLE enough- mayo. Because although I love mayonnaise as much as the next guy, you do not want to drown out the flavor of all this beautiful lobster meat with it. You just want to add enough so that it holds all the meat together.
I also like to stress only adding a Little bit of mayo because as with anything that has dressing, you can always add more but you can never take it out.

So add a little dollop,

And stir it all up.


Then it's time to get the buns ready.
Now, you could just put the meat right into the fresh roll and have at it, but why do that when you can take it up a notch and put the meat onto a buttery, toasted roll? I don't know either.


So spread a little butter onto the outside of the buns.
Because after all, you can't have lobster without a little butter, right? haha.


Toss them into a pan,


Flip them once they are browned,


Then line the bun with a little piece of iceberg lettuce, and stuff it full of lobster salad.


Then, dig in and enjoy!!!
