Anyways, I am back, and I have a little dish to share.
Now, I apologize for the lack of photos. I started this thinking it wasn't going to be that great, but it turned out so amazing that I had to share. So here goes.... creamy pasta with peas and arugula.
First I boiled some linguini. When there was about a minute left I dumped in a bunch of frozen peas so they could quickly cook with the pasta. Right before the pasta was done, I drained out about 2 cups of pasta water and put that aside in a Pyrex measuring cup. Then I drained the pasta & peas, put them in a large bowl, and lightly drizzled them with a little olive oil (this prevents the pasta from sticking all together).
While the pasta was cooking, in a deep sautee pan I heated up a little oil and butter (I love cooking with this combination), then added minced garlic and chopped scallions (mostly the white part). After letting them cook for a few minutes, I added the pasta water, about a tablespoon of fresh lemon zest, and some salt & pepper. Once this was all heated up, I tossed in some raw shrimp. When the shrimp were done, I tossed everything back into the pasta pot, mixed it all together, and added some fresh grated pecorino romano cheese.

Well, that's about it. A nice, delicious, and Easy meal. All in one dish, just the way I like it!
