stir-fry

Hello!
So, I know it's been a while since my last post, but I have a good excuse... I was on vacation!
I went to Cabarete, Dominican Republic with 4 other friends, and we had an amazing time!
I've got lots of pictures to post, but until I get around to that, let's get back to posting regular meals again!!!
Tonight's menu: shrimp stir-fry. Here goes...
Shrimp, soy sauce, honey, rice noodles and veggies (asparagus, red onion, yellow & orange peppers, carrots, and napa cabbage)

First step- saute the vegetables. I put them in a stainless skillet with about 2 tbsp. of olive oil.

While those cooked, I peeled the shrimp, then squeezed a little fresh lime juice on them. Once the veggies were done, I dumped in the shrimp.


Then I added a few shakes of soy sauce and honey, and let it all cook.


While that all cooked, I got the rice noodles ready. They need to soak in warm water for a few minutes before you can add them to the mix.


 Once the noodles had softened up, and the shrimp were almost done, I added them to the pan


At this point, I thought I was done, but then I remembered I had some bamboo shoots, so I threw those in too


A few tosses, then it was all done.


Thank goodness this was a quick meal, because I was soooo hungry at this point!

    That is not an ingredient you will find in this house!
    However... if you are coming this weekend, you should bring some. I'm making pulled chicken & cheese arepas. And I know for sure they are best with hot sauce...
