Zucchini Bread.

Yes, I'm baking.
And no, it's not something I normally like to do.
But, I love zucchini bread, and I had a couple of these beautiful little squashes from my garden, so I thought I would get crazy.
Hahaha. 


Now, there are about a million different recipes out there for zucchini bread, so after looking through a bunch, I decided on this one:

3 eggs
1 cup vegetable oil
1 3/4 cups of sugar
2 cups of grated zucchini
2 teaspoons of vanilla extract
3 cups of all purpose flour
3 teaspoons of cinnamon
1/8 teaspoon of nutmeg
1 teaspoon of baking soda
1/2 teaspoon of baking powder
1 teaspoon of salt


Preheat the oven to 350 and grease/flour 2 loaf pans (or 24 muffin cups)


Ok, now we start on step one of the batter by beating the eggs in a large bowl. Then add the oil and sugar.


Then, add the grated zucchini and the vanilla to the egg mixture.


In a separate bowl, mix the flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
Then add it to the egg & zucchini.


Make sure you scrape the edges of the bowl while you're mixing so everything gets all in there.


When it's all mixed up nicely, add it to the pans, then pop them in that nice, hot, preheated oven.


Bake for about 50 minutes, let cool a little, then enjoy!
