Fried

Well kids, I did it. I bought a deep fryer!
Actually, my sister bought it. Sort of. You see, she got me the gift card for my birthday that I used to buy it. So, technically she paid for it. But I got it. LOL.
And, of course it is a Cuisinart. My favorite!

Anyways, I have a fryer!!!! I am so excited. This is going to take things to a whole new level!
Now, I planned on waiting until the weekend to play around with this, but I just couldn't wait. So I didn't.
Tonight I decided to have lobster and cole slaw for dinner, so I thought that some sweet potato fries would go perfect with them.
So,  here goes...
Ingredients: one large sweet potato, oil, kosher salt and pepper.
First step: peel and cut up the potato into fry-sized pieces.

    

 Next, fry for 3 minutes at 325* to cook the potatoes

    

Then, increase the heat to 375* and cook for 4 minutes, or until they are as dark as you like (I like mine well done)

    

As soon as they are done, sprinkle them with salt & pepper (and any other spices you like). Do this while they are still hot so everything sticks.
And that's it! Enjoy!

oh, and PS- as much as I love ketchup on fries, I don't like it on sweet potato fries. So I usually make some kind of dipping sauce. for these, I just whisked together some mayo, a little ketchup, a tiny pit of mustard, garlic, and a little white vinegar. And it was delish! :)
