Back from hiatus for fajita night

Today someone asked me to send them the link to my blog, and when I clicked on it I was embarrassed to realize that I haven't posted anything since August 2014. 
That is over a year and a half ago guys!!!!! What the heck!?!?!
So tonight my new camera, my new tripod and I are blogging. 
And hopefully I stick with it this time. 
Here we go... 

Tonight's post: chicken fajitas.



I can't tell you the last time I made these, but I was out to dinner with my cousin the other night and he ordered fajitas and I've been craving them ever since. So I decided to whip up a batch. These are super easy to make, so it's a good weeknight meal.

Now, because I try to be frugal and healthy, I'm doing a lot of this from scratch But here's the beauty of cooking- you can really customize this to whatever works for you. 
For example- if its easier for you to buy chicken that's already cut into strips, then buy it. Or, if you would rather buy veggies that are already sliced, get them. Same with the accouterments- salsa, cheeses, wraps, guacamole, herbs, spices... whatever you like, get them. Or make. Whatever you want. There are no rules. I was actually going to add some fresh sliced avocado to mine, but the ones I have weren't ripe enough yet.

Anyways, here's how I made mine tonight:
Chicken, red pepper, green pepper, white onion, cilantro, shredded Mexican cheese, sour cream, salsa, and  flour tortillas.



First, I sliced up the chicken into strips, then tossed it in a skillet with a  little oil and let them cook. I had the burner on medium heat, so it took about 10-12 mins. I wanted to let it cook while I sliced up the veggies, but you can do it on high heat if you want to cook it faster. Also, feel free to add any spices you like at this point- garlic powder, cumin, chili powder, coriander.,.. whatever. Or nothing at all. Your call.







 While the chicken cooked, I sliced up the veggies. One whole onion, a red pepper and a green pepper. You can also use yellow or orange peppers, Or jalapenos. Or maybe toss in some fresh garlic. Again, whatever you like. No rules



 OK, so now I have chicken going in one pan, and the veggies in another. But, if you have a big pan, you can cook them all together. I just grabbed 2 separate pans, so I cooked them separately.




 Oh, while they cooked I chopped up some fresh cilantro, and got my plate and all the fixin's ready.


 And when everything was done, I got to assembling:
